A vegetable cutlet recipe is a delicious snack recipe. It can be served as an evening snack with green chutney or sauce. You can make this cutlet by baked, deep-fried or shallow fruit as per like your taste. I hope you may like these cutlet recipes.

Ingredients
- 2 cups potatoes (cubed)
- ½ cup green peas(matar)
- 1 cup carrot (cut into small pieces)
- ½ cup chopped beans (6)
- 6 tbsp bread crumb or ½ cup thick poha
- 2 tbsp. besan flour or rice flour or cornflour
- ¾ tsp ginger grated or garnished
- ½ tsp garam masala
- 3/4 cumin powder
- Salt as per taste
- Coriander leaves chopped
- Oil as needed
How to make vegetable cutlet
- Take the veggies and boil or steam them until they soften. After that drain the excess of water and moisture in it.
- Take all the boiled veggies in a bowl and mash them well.
Add bread crumbs, powdered poha, maida flour, salt, ginger, garam masala, garnished green chilies to the mashed veggies. - Mix everything well and make a non-sticky dough using your hand. If the dough is looking sticky so you can add more bread crumbs in it to make the non-sticky.
- Give patties shape to the dough and make 12-13 patties and set aside in a plate.
- Make a thin batter using 2 tbsp of besan or rice flour and dip the patties in it for both sides.
- Now take bread crumbs in a bowl and place the patties in a bowl and make sure that patties is coated with bread crumbs for both sides properly. You can also use ground thick variety poha and crushed cornflakes for it.
Repeat this for all the patties one by one. - Leave them all the patties on a plate 5 to 10 minutes.
- Now take a pan and heat oil in it. Fry the patties in it and flip for both sides and fry until they become golden.
- Serve veg cutlet with green chutney or any other dip (like mayonnaise)
How to make green chutney
- To make the yummy and delicious chutney, we take the coriander leaves, mint leaves(pudina leaves) , 3/4 cumin powder, salt as per needed your taste and 2 to 4 green chopped chilies, a small piece of ginger and 2 to 3 garlic cloves.
- If you want to add the lemon juice in it so you can add(optional).
- Now take the blender and blend the ingredients with the 2 tbsp water. Add lemon juice as needed.
- Now the green chutney is ready.
- Serve the veg cutlet with green chutney to your loved ones.
